What You Will Need:
1 Lb bag of Penne Pasta
1.25 Cup of TJs Tuscano Marinara Sauce or Arribiata Sauce
1.25 Cup Kansas City BBQ Sauce
1 Small Onion Diced
1 Large Clove of Garlic Diced
1 Jalapeño Diced (optional)
1 Cup Shredded Carrot
2 Large Boneless Skinless Chicken Breast browned and diced.
1/3 cup Cilantro Diced (garnish)
1/4 Cup Sour Cream (garnish)
Salt and Pepper to taste if desired
How To Prepare:
You can Substitute two bags of Trader Joes Frozen Penne Arabiata in place of the Pasta and Sauce
Pre-Cook dried pasta 3/4 of the way done drain and add pasta sauce and BBQ sauce and stir to combine. If using frozen TJ's pasta, place into large hot skillet or pot and when starting to thaw, add BBQ sauce and stir to combine.
Add all veggies except the Carrots to the pan and stir to combine. Add Chicken and stir to combine.
If a little dry you can add a little water or more pasta or BBQ Sauce to taste and stir to combine. Check seasoning for Salt and Pepper and adjust if needed.
Once completed move to serving dish and garnish the top with Cilantro and Sour Cream in the center.
Additional Notes:
You can add more veggies or Legumes if you want like Red and Yellow Peppers, Corn, Black beans, Peas... Stay away from veggies that overcook easily. They are better served on the side, like Broccoli, Zucchini, Asparagus...
You can remove the Chicken and replace with Grilled or seared, Crimini or Button Mushrooms, extra Firm Tofu or mock Chicken strips.
